Career path of a passionate chef
With a culinary career path crowned by success to his name, Yves Merville is a talented chef, and holder of the "Maître Restaurateur" title, winner of the "Prix Escoffier" in 1992, the "Médaille d'Or du Prestige de la Gastronomie", and the "Prix Taittinger" in 1994.
He kicked off his career in Paris's high-end restaurants (Lucas Carton, Relais de Sèvres, etc.), took a detour to faraway islands (Martinique, Seychelles, etc.), before finally arriving on the French Riviera (Royal Riviera in Saint-Jean-Cap-Ferrat).
In 1998, the chef, along with his wife Isabelle, decided to create La Table d’Yves in Haut-de-Cagnes (a medieval village in the Alpes-Maritimes department, between Nice and Antibes). However, the restaurant quickly became too small for them...
After looking for a new venue that could host their guests more comfortably, in 2002, the Merville family settled in Fayence at the foot of the village, among the vineyards.
